After reading the article, Food Desserts; If you build it, they may not come, I did agree with the second part of the article as well. There is much more than what the US Census focuses on such as farmer's markets, roadside farmer's markets, people's personal gardens, etc. than what they actually look into. Fast food restaurants go where the money is, and where the money is within a suburban area is where there are lots of workers. Most low income families' heads have more than one job and because of multiple jobs, usually they do not have time to go home and fix a healthy lunch/dinner. Since the 1980s, when restaurants started to use new technology to cook faster, it has been much easier and quicker to grab a meal and then go.
There are a lot of factors going into it than just that or even what the article suggested may be at fault. We should look into as many as we can and then come up with better ideas to improve on them all.
